Does anyone knows about catering services on those trains? Will snack bar or trolley available?

Highly unlikely. Long standing policy is no drink on special services

There isn't even a trolley on the 21:00 to Cork anymore

Cork special is the Mk3 citygold set, Galway could be a 3 car railcar hard to tell

Nor, for that matter, is there one on maybe half the Cork-Dublin and Dublin-Cork services.

Anyway, Mk3 snack bar could be open just for tea, coffee and sandwiches. I've checked reservation system. Train is almost fully booked.

It can, but it won't. Between the safety concerns related to serving alcohol on the train and the lack of willingness of Railgourmet to pay someone, it would seem like a bad bet.
